Enrich store-bought dough with butter and sugar by working it through with a stand mixer or by hand.
Dust a clean surface well with flour and roll out dough to 1.5cm thick.
Combine apples, brown sugar and mixed spice.
Spread apple mixture over the surface of the dough and roll to form a long log.
Cut log into 3cm pieces, place cut-side up on a tray lined with baking paper.
Cover buns with clingfilm and leave to proof until they have doubled in size, about 30 minutes.
Preheat oven to 180ºC.
Brush buns with melted butter and sprinkle with cinnamon sugar and pecan nuts.
Bake for 30-45 minutes until golden brown.
Mix butter and icing sugar until smooth, add the cream cheese and stir to combine.
Place cream cheese icing in a piping bag and pipe onto apple and pecan buns to serve.
